If there’s one thing I’ve learned about the Philippines, it’s that Filipinos know how to turn tropical ingredients into something seriously addictive. During my trip to Boracay, I came across Coco Mama, a coconut-based dessert served in an actual coconut shell. As someone from Vietnam, where coconuts, mangoes, and tropical desserts are also a huge part of the food culture, I was immediately curious.

And yes, I had to try it.

🄄 First impressions

The first thing that caught my attention was obviously the presentation. A dessert inside a coconut? Pho real? šŸ˜‚ The coconut shell makes the whole thing feel very tropical and very Boracay. It also looked incredibly colorful, with bright mango pieces, green coconut ice cream, sticky rice, and toppings all packed together.

The coconut ice cream was creamy and refreshing, which made it perfect for Boracay’s warm weather. The mango added a naturally sweet and fruity flavor, while the sticky rice gave the dessert a softer and chewier texture. The combination of creamy, fruity, chewy, and crunchy textures made every spoonful a little different.

What I especially liked was how the coconut flavor tied everything together. Instead of being overwhelmingly sweet, the different ingredients balanced each other out. It felt like a dessert that was designed for eating somewhere sunny, preferably while pretending I don’t have to go back to college. 😭

šŸ‡»šŸ‡³ My Vietnamese take

I found Coco Mama interesting because some of its flavors felt familiar. Coconut, mango, and sticky rice are ingredients I’m already familiar with from Vietnamese desserts and snacks. However, putting them together with coconut ice cream and serving everything inside a coconut gave the experience a distinctly Filipino twist.

It reminded me that food can be one of the easiest ways to discover another culture. Sometimes, you don’t need to know every tradition or understand every cultural difference right away. You can literally just start with dessert.

⭐ The verdict

Rating: 9/10 🄄

Coco Mama is refreshing, visually appealing, and packed with tropical flavors. I especially enjoyed the combination of coconut and mango, while the sticky rice and toppings gave it more texture than a typical scoop of ice cream.

My only complaint? It disappears way too quickly.

Would I get it again? Absolutely. It’s the kind of dessert that makes sense for Boracay: tropical, colorful, refreshing, and just a little extra.

Pho real? This one is worth the hype.
